Safe to cook or throw out?

Opening a package of thawed chicken and finding strange purple blotches can be alarming, but discoloration doesn’t automatically mean the meat has spoiled. In many cases, these reddish-purple areas are caused by bone marrow pigments. During freezing, ice crystals can affect the surrounding bone tissue, and as the chicken thaws, pigments from the marrow may seep into nearby meat. This can be especially noticeable around softer, more porous bones.

Another possible explanation is myoglobin, a protein found in muscle tissue that helps store oxygen. Freezing and thawing can alter the way myoglobin appears, sometimes creating darker red or purple areas. Dark meat naturally contains more myoglobin than white meat, so color differences can be perfectly normal.

The important thing is to look for other signs of spoilage. Chicken that has gone bad may develop a strong sour or ammonia-like odor, a slimy or sticky texture, or unusual gray or green discoloration. If the chicken has been properly refrigerated, smells normal, and feels firm rather than slimy, purple patches alone generally aren’t a reliable sign that it needs to be discarded. When you’re unsure about its storage history or safety, however, it’s best to throw it away.

Always cook chicken thoroughly to an internal temperature of 165°F (74°C). Thaw it safely in the refrigerator or by using the cold-water method rather than leaving it on the counter. Purple blotches can certainly look unsettling, but color by itself doesn’t tell the whole story—odor, texture, storage conditions, and proper cooking are much more important when deciding whether chicken is safe to eat.
